This is really a Yummy loaf of bread. I thought if it is low fat, the bread will come out dry, but it is not the case! It is soft and moist! Even it sits in the refrigerator over night, it stays moist and soft! I tweaked the recipe for a little. I added walnuts and use 2 tsp of non aluminum baking powder instead of baking soda. by the way! I used 3 ripe bananas. I enjoy it with my favorite French vanilla ice cream!
